We started our Las Vegas celebration on Wednesday 01/29/2014 because that is Chinese New Year eve in China. Since China is 16 hours ahead of Las Vegas time. Traditionally New Year eve is with the immediate family only. We started the day with the traditional dumplings, see photo. We made them fresh the day before and they take a lot of time to make and what makes a great dumpling is the dough or wrap. We purchase the wraps from a local supplier who supplies all of Chinatown and the high end restaurants in Vegas. It is much like a great sandwich, it all starts with the bread and it does not matter in the meals are excellent the bread is the key. Just like a dumpling if the wrap is poor quality then the dumpling will not have the right taste and texture. We spent all day preparing a meal to eat with the in-laws via Skype from this home in a small village near Nanjing China.
